“When we began to think about creating a white wine, we had a very clear aim in mind: to make a truly special white wine. The starting point is the Viura grape, with very careful fermentation, stirring of the lees during fermentation, and at the time in the cask, which makes this wine great. Harvesting
Between Sept. 30th – Oct. 10th. Hand harvested.
Fermentation
Hand picked grapes. Fermentation in oak gives body and texture to the wine, 10 days in French oak barrels.
Fermentation Temperature: 22-25°C.
The wine spends a minimum of 6 months in French oak barrels. A further 6 months of bottle aging follows, before release.
Alcohol: 12.5%
