Production:
The main goal is to obtain the full maturation of the grapes. To achieve the goal, the grapes are manually harvested in the morning, twice green-pruning ("esporgar" and "escabellar"). In the celler, the grapes are extracted from the vines for preservation. The grapes undergo pneumatic press to prevent breakage of the branches allowing extraction of high quality juice. The grape juice is kept with lees in suspension at low temperature for 3 days. After that, the lees are removed and the alcoholic fermentation process is started while increasing the temperature. When the alcoholic fermentation process has finished, the wine, together with their fine lees, are transferred to oak barrels of 500 liters and kept during 1 year.
