Production
Following the exhaustive control of the vineyard during cultivation, the harvest is carried out manually using small boxes with 15kg capacities in order to prevent the grapes from breaking. Once the grapes have been transported to the winery, the grapes are kept at a controlled temperature of 5ºC. The clusters are chosen one by one on a vibrating selection table. Then, the grapes are then destemmed and macerate before being pressed in a pneumatic press. The must obtained from this process is then separated and undergoes static racking.Quinta de Couselo Selección ferments at controlled temperature before finally being aged. This wine spends 28 months on its lees and is stabilised in stainless steel tanks.
